It is the same app on the same machine either way — the difference is only your answer to the first question setup asks: a subscription, or your own AI key. The privacy boundary does not change: the hosted service is built never to store your email or the digest it produces.
This runs on hardware you control — a spare machine, a Raspberry Pi, whatever you've got. With your own keys, your email and your API keys never touch a server we operate. With a subscription, the text of the emails being summarized passes through our service to be summarized, and is not kept — your mail is still read on your own machine, and nothing else in your mailbox reaches us.
